Liver dumplings: the essence of a proper Czech broth

Liver is rich in vitamins and minerals, yet it's not to everyone's taste – you either love it or hate it. But even those who turn their nose up can rarely resist liver dumplings!
Ingredients for 8 servings:
- 500 g chicken liver
- 140 g lard
- 20 g crushed garlic
- 2 eggs
- 5 g marjoram
- 250 g breadcrumbs
- pepper and salt to taste
- Clean the liver, mince finely and mix with the lard, garlic, eggs, spices and salt.
- Add the breadcrumbs and combine thoroughly.
- Leave the dough to cool. Then shape the individual dumplings.
- Cook the dumplings in salted water – as soon as they float, they are ready.
